Southern Meatloaf Recipe
Southern meatloaf is usually served as a comfort food or a good hearty winter meal. Although suitable for anytime of the year if you ask me. This recipe uses quick oats instead of bread crumbs and tomato sauce in the place of ketchup.

Notes
While southern meatloaf is traditionally made in the loaf style, you can make it a little more modern. Instead of making one large loaf you can cook your meatloaf into a muffin pan. This helps you have pre-portioned out serving sizes and it does cook a little faster this way.
Ingredients
- 1lb Ground Beef
- 1/2 Cup of onion diced
- 1/2 Cup of bell pepper diced
- 1 1/2 tablespoons of Italian seasoning
- 1 Egg
- 1/2 Cups of instant oats
- 8 ounces of tomato sauce
- Ketchup
- Mustard
Instructions
- Wash all produce and work surface.
- Gather all ingredients. Dice onion and bell pepper.
- Mix all ingredients together in a large mixing bowl. ( I usually do this by hand)
- Once mixed, place on a broiler pan and rack in a loaf shape.
- Top with ketchup and mustard
- Cook for 30 minutes or until down in the center.
